    I love sausage with pepper and onion, same as this. One trick I learned from my brother years ago, if you take a sharp pairing knife and slice just the casing down the entire length and peel the casing off, you can mash them down a bit and straighten them out and grill or pan fry them like that.
    The benefit is they don shoot out the back of your roll, your bites net you equal parts bread, onions and peppers and sausage with out the whole sandwich falling apart. WHen you straighten them out you can fit two on a roll.

    If your making sandwiches of course, just assumed you are.

    If you remove the casings, especially from brats, you can then make brat patties as well... and with the 75 different flavor varieties of brats.. chances are you'd enjoy them as patties too

    Sometimes I split them but not that often, typically after the cook though.
    These were simmered in beer and black pepper for a couple hours prior to going on the grill.

    I hope you still have it.

    Get some hot water running, a piece of wire or a pipe cleaner is best.

    Run the hot water down the barrel, pipe cleaner, hot water, rinse and repeat a few times. Open the salt chamber and do the same. Fill the chamber with hot water and keep firing it. You have to hole it level cause the chamber isn’t water tight.

    rinse the whole damn thing.

    lay it on your dish rack in ac or with a fan. Ac works best. Fire it several times a day. They dry out in 2 or 3 on the inside. You want to make sure there is NO moisture in it.

    Morton’s table salt is all I use. I tried kosher, flakier salts. Table salt.

    it’s all plastic. What are you going to fuck up. Better than buying a new one. I live in FL, humidity. You have to sort that kind of dumb shit out. My wife leaves it out there all the time.

    Edit: That’s why I have 3 of them. I hate NOT having one. So I have dry time ones and a workable one hidden. So I know I always have one operable.
    Nephews and friends running around and what not.

    close, Hillshire Farms honey ham summer sausage leftover from Christmas. It was never opened and I found it hidden in the back of the fridge. 6 hours later and no ill effects yet.
