I recently built an offroad trailer and I had to take it to a certified scale to be weighed. I was surprised to see it came out at 5080. half tank of gas. The guy even lined it up so the trailer and truck were in the appropriate spot. I did think the trailer came in a little high. I was thinking more like 600lbs but that still puts my truck under 5600 (what the internet says it weighs) and it has a fiberglass topper.

5600 is your gvwr, your curb weight is about 4450 IIRC. Mine is 5000 with my RTT, full tank and about 320lbs of skin bags. It is very easy to get over gvwr with these.

With the trailer you will want to find gcwr, not gvwr. I'm not sure what the rating is for our trucks but they are rated to tow 6500 or so, so with an otherwise empty truck your gcwr should be around 11,000, but I would never ever reach for that.

Although it measures same side to side with no added shims or spacers.

Stock springs? The Toyota springs are side-specific.

The stock springs must be making up the difference. Toyota knows their stuff.
