Yes you can, i've seen it. someone build a rack with a bed mount winch on a top pull. I saw it over on toyotanation.com it was mounted to the frame through the bed. It contoured to the shape of the rear window, except right in the top middle there was a pully that the winch cable went through to pull the deer into the bed.

I've loaded deer, elk and moose into the back of pickups by myself without a winch.
Back up to the gutted animal. Tie a rope to it's hind legs, run the rope over the corner of the box & sinch(sp?) tight to an anchor point ahead of and to the side of the truck. When you back up the animal has no where to go but into the box. I recommend removing your tailgate & a headache rack will help to keep from scratching your paint or denting the cab. The rib cage does want to hang up but rolling the animal a little when it hangs up is enough to get it over the hump. With a bigger animal (and shorter box) you might have to anchor the hind legs in the front corner and do a second pull on the head. With a strong rope this is very reliable.

Most " stock " headache racks use some variation of this type of set up for mounting into the bedrails

Have you done the D-ring mod? Maybe you could do the D-ring then get 2 clip style pullies and some ramps of some kind. Assuming you're taking elk, which I've never seen in real life but judging by thoes pics their huge, put two of these pullies on the D-rings hog tie his hooves together with two lines. Then feed the two lines through the pullies and pull him up via the ramp, or get a come-a-long find a nice mounting place and winch him up like that. That way you have 2 nice mounting places for you to pull him up with. Is feild dressing and quartering out of the question?

At least a peice of plywood small enough to fit within your wheel wells with some 2x4 on the underside for support. The more pulleys you have the less force you exert pulling him up. You could put 2 dual pulleys on the D-rings closest to the cab then 2 on the opposing side and pull. With thoes 6 pulleys your pulling 125 lbs, it's going to move alot slower but it's alot easier. Also cheaper than having a custom rack built, buying a winch, and wiring it in.
