    Javelina (they have a skunk smell), most folks will say you can’t eat them. You need to wear rubber gloves when skinning because of the glands and never touch the meat with those gloves, if you do the stink will stay with the meat making it inedible. Then discard gloves, put new ones on and get the meat. I make Javies into chorizo and they have a very (good) unique flavor.

    Very nice, I’ve heard of people eating the havalinas, glad to see you culling the herds. They’re a huge problem in a lot of SW areas.
