So as luck would have it my tool guy has a single 18V 5ah battery that he brought in for another contractor that cancelled after he already ordered it so he'll give it to me at his cost

Those tiles won't be too difficult to remove at all .
I was thinking it was a mud-job , but those are simply applied on. Hammer and a thin, wide chisel will knock them away.

They have scraper attachments to go on reciprocating saws, that would get all of the glue off the walls (you'll scar the walls, but that's ok. Just patch it).

So leaving drywall would be a poor decision I assume? not sure how I feel about tiling it. But if I did not tile what's the best way to ensure the drywall is safe for exposure

The drywall will be toast by the time you get rid of those tiles most likely

A purist would remove the wallboard. I'd go either way (I was in construction for nearly 22 years), but if you're on a budget, but have the time, remove the tiles.
I'd actually try and remove 3 or so sq. ft. in an area outside of the shower, just to see how much of a pain in the ass it might be.... I don't think it would be bad.

For your ceiling, you may just want to remove the wallboard anyway to enable yourself the ease of installing the exhaust fan's piping and wiring. If any of the 3 walls there in the bath are exterior walls, cut a holesaw into the drywall and check for proper insulation.... To properly insulate, now's the time if removing wallboard.

    Drywall, yes

    Plaster, no.

I don't know what type of walls are the norm out there. It's plaster here.

I'll wager that shower has moisture in the substrate

By plaster you mean blue board and skim ?

I find it easier to remove the tile with the wall board, it usually comes off in large sheets.

I'd bet against it. I'm judging by the tiles/color (1960's ?) and that there is a fiberglass upright shower stall in place. No need to waterproof the wall areas.

That seems to be more of an east coast thing in new construction . Out west here drywall and taping is the norm , only time I see blue boarders and plasterers is on This Old House , although there is no doubt that a plaster skim coat makes for a more rugged wall finish and for a better surface for paint

Only plaster I've ever dealt with here is old lath and plaster in old buildings

thought about just taking a tile saw and installing the exhaust fan, but if it isn't going to cost me a fortune I'd rather do it right.

Doubt tiling is within my budget.

Why don't you install the exhaust fan in the non tiled section of the ceiling
