#2 was definitely aftermarket. i followed into the cab and it hooks up with a mess of more aftermarket electrical work. i couldn't tell what it was serving specifically though.

i actually changed my brake fluid a couple weeks ago when i swapped out my brakes. maybe just bad lighting? the reservoir also has a ton of crazing, and is pretty yellowed. maybe it's just making it look darker. hopefully it doesn't completely disintegrate like my windshield washer fluid reservoir.

Could be a tilt switch that was hooked up to an alarm.

i went to investigate that sensor a bit further, but the bracket was apparently pretty rusted through. it just fell off before i could get the second screw out. so then i just cut the dang thing out. fingers crossed everything still works tomorrow.

That looks like a ball type switch. It has a ball inside that rolls to the back when the hood gets opened. It grounds through the bracket and the wire provides that ground to either a module or a relay. Even if it was still installed, removing it shouldn't do anything as the module would just think the hood is closed.
I'd just trace all the wiring associated to it and remove everything.
