    I smoked, err, oversmoked a rack of ribs and a pork brisket. I got the brisket a while ago at FoodTown. It was not 1 piece as I expected, but actually 4 strips of various widths.
    I made my Ethiopian rub. I smoked them for about 5 hours. Probably a couple hours too many. Every hour or so, I broke up some more pecan branches and put it on. Knocked down about 4 Saint Arnold Icon Greens while doing this, other stuff later.

    I wrapped and put in the oven at 250 for a couple hours.
    Next time 4 hours max.

    I have 2 pecan trees, and they drop crap and I keep the branches for smoking. That and Red Oak charcoal. This was in my ECB smoker (El-Cheapo Brinkmann)

    I also made a variant of Greek Cheese pie (teeropita). I added some leftover lamb to the cheese pie, I didnt make a Bechemel sauce to start (no milk) I just miked the eggs, feta, cottage cheese and ricotta, added dill, pepper, some smoked salt and the chopped up lamb.

    This is my modified Ethiopian (Berbere) Spice recipe.
    Not exactly, cause I didnt write it up from my printout, but one I found to give you a general idea
    And I was out of ground ginger. These ratios are almost what I use, I made a triple batch of it Sunday.
    • 1 teaspoons coriander seeds
    • 1 teaspoon cumin seeds
    • ½ teaspoon fenugreek seeds
    • 1 teaspoon black peppercorns
    • 1 teaspoon black cardamom
    • 2 tablespoons dried chipotle
    • 4 cloves
    • 4 dried red chilies, seeded, broken into small pieces (see Note)
    • 3 tablespoons paprika
    • 1/2 teaspoon smoked salt
    • 3/4 teaspoon allspice
    • ½ teaspoon ginger
    • ¼ teaspoon cinnamon
    • 1/2 teaspoon turmeric
    Instructions
    1. In a heavy skillet over high heat, toast the whole spices (seeds) and chilies, shaking the pan regularly to prevent scorching, until very fragrant, about 3 minutes. Transfer to a bowl and let cool completely.
    2. Grind the cooled spices in a spice or coffee grinder. Add all remaining ground spices and salt and grind everything together.
    3. Store in an airtight container in a dark place.
