I smoke all my briskets for 12 hours. Up at 4am to start the fire and put the briskets on at 5am. Ready just in time for dinner.

Consequently, drinking also starts at 4am on those days.

 

I miss Texas.

Amount of time should be based on pounds of brisket. Normally 1 to 1.5 hours per pound.

 

Anybody wanna buy my bumper? Has been cut on the sides to match cut fenders. Mounts are slightly bent out. All it needs is to be hit flat again with a hammer. $300. Winch not included.
