what size wheels would I need to replace factory wheels on an 04 crew cab? 16x8 or 16x10?

Pretty sure they're 16x8, but I'll defer to somebody that is certain.

    If I'm not mistaken, the 2001 - 2004 optional 6-lug alloy wheels were 16X7's.

    You are correct...16x7

It seems to be very or most common for Taco's to run an aftermaket wheel of 16x8 with 265/75r16's

be carefull when selecting a wheel, there are alot that do not fit (rub the front brake cals.
