You are me. Something like this would normally have me on the fritz about dumping the truck altogether. But it’s not healthy to think that way. It is a truck after all and it’ll take way worse of a beating on any trail than this little mishap. But what would bother me here’s is the bacteria that will grow from the sugar...

I’m curious if it drained out of the A/C drain. If so then what I would probably do is pour some soapy water down there and then clean water.
Maybe thrown some Epsom salts and essential oils in with it too. Lavender or eucalyptus.

Piece of heater hose or smaller if needed attached to the end of a wet vac with duct tape. Suck out what you can then pour a bit of warm water down. Wait a few. Suck out. Then a bit of isopropyl alcohol and let it evap . Should do the trick

A professional detailer in your area can give you a good idea of what your options are.
If there is no smell, they can steam the vents. Should take care of it.

Not sure why anyone would stick a soda on the dash of a truck when you have 5 cup holders in the front alone XD BUT at least it's better than the guy who projectile vomited on his dash and into the vents. So at least you don't have that problem.

R&I evaporator case. Split the case. Clean the soda. Reassemble.

This most likely involves draining the engine coolant (because the heater core is inside the evaporator case), evacuating A/C refrigerant (because the evaporator is in the evaporator case) and then removing the entire instrument panel.

Plan on leaving it at the dealer for two days. Maybe one day if they are not busy and you have a very competent technician.

OP - Earns Hero Status for being one of the few (and the brave) for actually admitting to a mistake and not blaming anyone else.

Good luck with this and Merry Christmas sir!

    It could be worse....

When my son was about 7 years-old, he managed to knock-over a full Sonic Route 44 Cherry Lemonade down into the shifter base of my then new Acura. The shifter was glued/stuck until I pulled the entire console and mechanism apart.

How long did that take to fix?

OP, it could be worse. I had a friend in high school who ran out of gas so she literally put soda in her own gas tank thinking it would help her get to the closest station.

Had something similar happen in my F150. Stopped in 7/11 to grab a Arizona tea. Jumped in the truck and somehow it slipped out of my hand. Landed on the side of the shifter, the truck had like a metal trim ring around there. The unopened can landed sideways and somehow the can split under pressure. Started pissing everywhere. The headliner, windshield and around the shifter was soaked. The 7/11 is across the street from the dealer I worked at. Pulled the truck in and started cleaning it immediately. Thought all was good afterwards. Go out to the truck a few hours later and the shifter was sticking. Had to pull out the entire center console. Then pull apart the entire mechanism to get in there and clean the entire assembly, to get it to stop sticking. Couldn’t believe how much got down in there. It was a pain in the ass and took me a few hours to do. It was pretty crazy and I still can’t believe the can split open like it did from a ~ 12” fall
