I was wondering if anyone else that got this setup kept their stock UCAs or whether or not it would be a good idea to get stock UCAs. The guy at the shop told me the stock UCAs would be fine for this setup.

You are fine with stock UCAs. Anything more - 2.5-3” I’d say yes.

You should be fine with the stock UCAs as far as alignment is concerned. If you have the Eibach 2.0 coilovers then you may or may not get close to making contact between the coil and UCA at full droop. In my experience some clear and some don’t. That point is moot if you still have the sway bar since it’ll limit your droop unless you have both wheels off the ground.
I’d at least do a visual check by jacking the drivers side front wheel off the ground. If you don’t make contact there, then you’re fine on the passenger side as well.
