So I didn't buy the model with the power outlet installed in the back,
But I was wondering if it was possible to install it as an aftermarket mod? Or is it possible to buy it from Toyota and them install it?

Install an aftermarket inverter. The Bed one only runs up to 400W, not much.
Pepboys sells inverters that have remote switched, which you can mount in the switch blanks. Keep the inverter either under a seat, or behind the rear seats and run wiring to the batter/outlets you can mount in the cab or bed.

    Here's one of the inverters

I'd search for AC outlets in center console, there are lots of guys here that have mounted regular outlets you would see in your home, in the bed and the center console.
