I have a Kenwood DNX8120 and my album artwork is clear.
    I can tell you this:
In Itunes, you can manually assign artwork to a group of songs by right clicking on them and choosing get info. Then just double click the blank artwork square and browse to the image that you want.
Just stay away from pictures that are too large. In my opinion 100 KB is about the biggest I would consider using. That is probably too large as well.
You can just do a Google search for artwork. Sites like Amazon have every album cover there is.
After Itunes displays artwork, the Ipod will follow suit. After this, the result for a head unit will depend on the quality of the integration with the Ipod.

Organizing your music library is time consuming but worth it. A large well catalogued music library is priceless.

oh I hear ya my itunes is clean and organized. Its just pixilated on my head unit and it pisses me off. Most of my artwork comes from itunes itself. for music I have that itunes does not it comes from amazon. still pixilated though.
