    I can catch the drippings in a pan for gravy, and who the hell likes stuffing? The turkey is soooo damn good from the smoker that you don't need stuffing.

    Not the first time I have been called that. I'm strangely OK with it.

    However, through the rest of the year I am one of the most kind hearted and generous people you could meet if you were around me. I try to take care of everyone I work with.

    Plus, I don't care for all the commercialism of the holidays.

    Haven't had time with my family during the holidays since 2005? I have either worked or been deployed for the rest. I really don't mind it either way. I would rather give someone that has a family around here time with families than deployed.

    I make an oyster stuffing and a sussage stuffing for the meal.

    I used to do a smoked turkey when dad was still with us but stopped that when he passed on. I do make a roasted turkey, today, and a spiced ham, tomorrow. I have a killer glaze for the ham and I put it over baked apples and pears.

    As requested


    Spiced Glaze
    1 cup Firmly packed Light brown sugar
    1 cup Steen’s pure cane syrup
    ½ cup dark molasses
    ½ cup dark corn syrup
    ¼ teaspoon fresh grated nutmeg
    ¼ teaspoon ground cloves
    ½ teaspoon ground allspice
    ½ teaspoon cinnamon
    1 teaspoon dry mustard
    ¼ cup water

    Mix water and mustard in small bowl. Mix all other ingredients in large bowl then add water/mustard. Use right away or can be stored for up to 2 weeks in fridge in sealed container.

    This is from Emeril’s Creole Christmas cookbook.

    Steen’s syrup is hard to find but can be brought on Steen’s website. You can sub another syrup if you wish. I have used maple in the past with decent results.





    Sausage Dressing

    1 LB of your favorite sausage
    1 cup chopped celery
    1 bag of your favorite stuffing mix
    ½ minced onion
    1 teaspoon salt
    1 teaspoon paprika
    1 chopped up apple-Granny Smith is recommended
    2 cups of turkey stock

    Cook sausage till done in skillet then add onions and cook till translucent. Mix rest of ingredientsin a large bowl.

    Put into casserole dish and bake for 30 to 45 min in a 350degree oven.

    You can also add 1 stick of melted butter if desired. I usually use ½ of the sausage drippings. You can also add an additional granny smithapple for more apple goodness. You can also add chopped green or red bell pepper to the sausage/onion mixture and cook.
