I would like to find some off-road trails that are not too rough to just go drive. Like...nature trails. Places my wife and I could just go on a day trip to and enjoy the scenery.

So, pre-runner friendly and no intentional mud pits (no mudding for the sake of mudding)...is there anything around Kansas or nearby in Nebraska, Colorado, Oklahoma or Missouri?

Looks like maybe minimum-maintenance roads and county dirt roads are our best bet.

look into the orv laws , i know in Michigan you can drive on orv tails with just a 17.00 orv sticker, and most of hem are pretty well kept up

Take a drive out to Manhattin Kansas. There's some trails out there that are pretty easy.
