I wish we had a Costco near here! The closest one is over an hour away, and so far I haven't been able to convince my wife that it's worth the drive.

This got an lol out me!

Yeah the expense...meh I don't know if it's all that bad, considering it cost minimum $10.00 for fast food drive through.
If anything it seems like a few more trips to the grocery store possibly.
I have a meatloaf cooking in oven now.
For me, if I'm busy like working I don't think much about it, bit sit around on day off with television or forum I'm in snack mode.

Some guys in the Food Smokers thread were posting up their smoked meatloaf pics pretty recently. That made my mouth water for sure. I haven't tried to cook a smoked meatloaf yet, but hopefully soon!

    Also...

Loving this book! Easy recipes for working folks and families. No fancy ingredients

I made the FUDGE and OMG was it goooood! Whipped up a batch of real whipped cream topping and it was magical! Again I doubled the recipe because you can never have enough fudge.

Just ordered the book, thank you.
I love/hate Amazon....20 minutes ago I just spent $200.00 but my daughter's Jeep transfer case shift linkage was $170.00

And I found a hack to make a pizza that's even lower carb than one with cauliflower crust (sidebar, I read nutrition labels while shopping and find that cauli crusts are still quite high in carbs considering their cauli... Anyone else notice this?)

Anyway, back to pizza... Using a 10"-12" pie plate (or tart dish or quiche plate), press one pound of uncooked sausage into the bottom of the plate, forming the 'crust'. Bake for a few minutes until cooked. Remove from oven and top with regular pizza toppings - sauce, cheese, pepperoni, onion, ham, bacon... bake again until cheese is melted.

I try to find online stores before resorting to Amazon, they don't really need any more $$... As for books, I try to get them from my library first. If I like it, then I'll buy it. I found a couple great ones and bought them. But there's been a couple that Im glad I didn't waste my money on...

    That pizza looks great!
I don't recall but maybe taco's, my daughter just melted a layer of cheese cooked to a crisp. May have been more of a burrito wrap.

My goodness you sure have done well to make some great looking dish.
Wife makes me a chicken broccoli dish that she used to make with some kind of bread dough. It's great without the dough/bread.
