you could only 'break the ground' by removing the starter.

but it definitely wouldn't start then!

but that won't work on these trucks, as they're coil-on-plug.

I got that from the diagram, but the solenoid that pushes the gear to the flywheel is grounded separately. Take that out of the loop and you will basically free spin the starter.

Hidden cut off switch on IA4_10. No running wires from engine bay to cab.

When I bought my previous Tacoma brand new, which was a 1996 Tacoma Xtracab, it actually came with a ProLock already installed on it at the dealer, for security on all their vehicles sitting in the parking lot. While I didn't like it at first, I realized that it was a pretty good thing, and got so used to it that I didn't even notice it anymore. What it was, was that when installed, there was a small box mounted usually under the dash, and the vehicle would not start or do anything, until a computer chip was inserted into the box under the dash. Supposedly it could not be hotwired or at least, could not without a whole lotta trouble! But anyway, I liked the way it worked, and would totally love to do the same thing to my current 2019 Tacoma TRD Sport. But the company has gone out of business. I found something similar with another company, but they wanted around $1000 to do it, which was ridiculous. But I really liked the ProLock security system!

Cutting coils is still an option on these engines. The only difference is that power now comes from the ECM... not the ignition switch like older single coil vehicles. You would just interrupt wires V and W on this harness.
