    We've been doing the bird on the bbq for over 30yrs. Been doing the brine for the last several years with no complaints. Always cover it with cheese cloth and keep it basted.

    I agree with you 100%. I make a foil shield for the breast and give the dark meat a head start.

    I spatchcock chicken and Game hens all the time. It’s a great strategy for sure. A big bird will color outside the lines of a half sheet baking pan I imagine.
