A-pillar is the way to go. I went with a triple pillar (for Boost, Fuel, and Oil Pressures) and a vent-mounted Aeroforce Interceptor for Coolant Temp, Head Temp, Volts, IAT2, and AFR in my Shelby. Not the best photo, but you get the idea...
