You had the 17" OE sport wheels to begin with right? I'm going to walk you through the math so that you'll get a better understanding of it. I'll see if I can't find a calculator that will show you visually what is happening as well.

Pretty close to that an 8.5" wide wheel with a -12 offset sits pretty flush with stock body

 That's a really good one!

I've been doing it long enough it's second nature. Can do the math in my head pretty much.

The truck has had rockstar v1s on it since i got it. From what i can tell they are 5" backspace, 0 offset, 9" wide wheel (which doesnt make since. Wouldnt 0 offset on a 9" wheel be 4.5" backspace?) I want 1.5 - 2 additional inches of pokeover the rockstars.

Yes a 0 offset 9" wide wheel the mounting surface is dead center between the tire mounting points which is where rim width is measured. This is why BS is an inaccurate measurement and hasn't been industry standard since the 80s. BS you are including the lip or lack there of on the back of the wheel which can vary from no lip up to .75".
Offset is purely giving you a dimension of where the tire is in relation to the mounting surface without any erroneous extra added on to take into account and have to remember to subtract later. Some manufacturers will give you the BS of their wheels as well but it includes the thickness of that lip which is why it doesn't equal the same as offset.

Positive offset the wheel is set in negative offset is poked out.

For reference you were thinking of wanting a -30 mm offset wheel so at 0 offset you have 4.5" of wheel to the outside of the body. With a -30 you have almost another 1.25" of wheel to the outside. So since you'll need 2" due to the over fenders you'll need about -50 (actually -50.8) offset to have the wheel flush with the over fenders with the 12.5 wide tires they will be ever so slightly past the over fenders.

My -12 offset 9 wide wheels with 1.5" spacers are about what you are looking for. Or you can get beadlocks in a -38 then if needed add .5" spacers. I think some non beadlocks come in -38 as well.

This is where my current wheels sit, which i believe are 0 offset, 9" wide. The fitment isnt disgusting, but its not good either. I'm thinking a 30mm offset would line it up pretty well, but does that make sense? I also run a 1.5" spacer in the back to make it align better.

Yes it does. Can you find -30 offset wheels is the question?
If you look on the back of the wheel it is cast or stamped on there or on the barrel of the wheel what the size and offset is

I cant, atleast from the major brands. Fuel offers a -18 offset 9" wheel. I did check the back of the rockstars and there is nothing stamped. Given the stock wheel is +30, 7.5" i think it all makes sense.

I'll get a good pic of mine maybe you can overlay onto your pics and see -12 9 wides with 1.5" spacers.

Ummm it's stamped on there that's actually required by DOT It may just be really dirty so you couldn't see.

    A thing or two...
I'm running the BajaKits +2 with the same fenders and bedsides. I'm running 315/70r17s on a 9.5" wide wheel with 2" spacers in the rear, and I'm basically flush.
