I can get the box that has 1 8" @ 250 rms or this one at 500 rms for 2 8"subs...

Would there be a noticeable difference in 2 vs 1?

2 8's have tight bass, but if you want low frequency...10" or 12" shallow would be better for behind the seat. 8" won't go as low or hit as hard from same brand/family line of speakers unless the box is tuned really well. JL has a nice name...I never used them before, but $600+ is a bit for sub box.

Basically, is 300 bucks worth it to have 2 8's vs 1 8? is there a real difference?

class D amp is $100 to $200. Sub is another $100 to $200. box is $100+. That's fine if you want to go that route, but you asked if 8s are good...just saying they have 8 bass and doesn't hit as low as a 12" would... two 8s is like one 10" and two 10s is like one 12", but new subs are really good and then you have DSP to process the sound. Depends on how loud you want your music. Sound is very subjective. I've listened to $60K JBL everest before from the designer himself. Another designer shown me his $400 speakers and they sound good for the price. It's hard to tell what is missing until you have it A and B speakers to demo or your ears are trained. You've asked for adivce...this is what I know.

Does it have to be JL? I never had them but I hear good things about them. How loud or what type of music to listen to. Do you have where folks hear you from a block away. Decades ago...I had friend with an Astro van that had a 21" sub and a wall of subs. I'm planning on 10" or 12" in a small box since I don't care for music being hear far away...I want good clean bass that goes low for all types of music.

You have to describe what you want since it's an open ended question you are asking for. For example..you can get something like this
    https://www.tacomaworld.com/threads/toyota-tacoma-jl-audio-tw3.427672/#post-12270142

and it'll probably hit harder than 2 8s...but depends on how the box is tuned for what frequency.

Should be about a 6dB gain. 3 db for doubling the piston area. 3 dB for doubling the power. Most think 6 dB is significant.

Does someone already have this installed? I would think the bracket between the two rear seat sections would be in the way. I could be wrong but I would check if you haven't already.

Thanks for the replies guys. I have thought about going the route of the super crew sound box and a DD 10 inch sub with a 500.1 amp. I would be looking at 400 bucks that way. I listen to all types of music, and I do not care about anyone hearing it a mile away.

Update - I bought the single 8" with 250 rms amp. Sounds excellent, and sits below the bar behind the seat. Very nice small ported enclosure designed by JL for the JL speaker. Amp is also JL.

Good job updating the thread! Now future people will have an answer. I hate when threads don't really have an ending.
