Sorry to keep y'all in suspense but here are the results.

TLDR; Truck is fine. The fuel pump went out, even though I just replace the entire housing unit.

I started out what I Stated from the OG post. Oil showed no signs of metal/froth/etc, nothing out of the ordinary. Dropped the pan, checked the oil pick up and nothing weird. I had the truck at one of my friends who has testers that I didn't have. We came to the conclusions that the fuel pump wasn't sending anything to the engine. I couldn't really believe it, but I trusted his advice and swapped the sending unit.......agian. The one I originally replaced was from rockauto, and I never had problems with parts coming from them, but I decided to order the "new new" one straight from Toyota. We got it replace and I was good to go. I'm so relieved. I was curious to see why I was reading so high on the dipstick. I retraced my steps to where I broke down, since its the same road I drive to get home. At the time I was in a panic state and didn't realize how my truck was positioned. (It was leaning towards the dipstick so that is why I was reading high) So it makes sense that it was the was it was. I drove it for awhile before I wanted to post anything here because I wanted to make sure that was the fix. Nothing else to report.

side note: I want to add an Oil gauge. The whole thing of how the oil light wont turn on till literally the truck will shit itself scares me. I want to keep this truck till it cant, if that makes sense. I would appreciate suggestions. Thank you again everyone!

I think your oil pump is the likely culprit.

I cannot speak to the engine in your second gen Tacoma; however, as for the 2RZ-FE/3RZ-FE, normal oil pressure is notoriously low once the engine reaches operating temperature, namely around 14 PSI. My oil pressure maintains between 14 and 18 at idle. Modern engines tend to have higher normal oil pressure; however, your truck is a 2005, which tells me that normal oil pressure might be quite low for your engine, too. Anything in the single digits would concern me, however.
