    I just bought a Cuisinart ICE-21 ice cream maker and the Ben and Jerry's ice cream recipe book. The tub is in the freezer and tomorrow I make my first batch: Very Chocolate Ice Cream (not a B&J's recipe). It's custard based... Should be awesome.

    Any other ice cream makers out there? Tips, tricks, recipes and favorites?

    Just put my first batch in the freezer. It is awesome! As the name implies - very chocolaty but just a little sweet. Probably the creamiest ice cream I've ever had. Tomorrow we're going to make vanilla...

    I use a simple recipe and add to it. No cooking either. I think it is a good base to start with. We use a kitchen aide stand mixer to mix everything together and then put it in the ice cream bowl attachment to make the ice cream. Definitely not healthy though.

    2/3 cup sugar
    2 eggs
    1 tsp vanilla
    Whip on high until thick


    Pour in
    2 cups heavy cream
    Whip on high until it looks like whipped cream (stiff peaks). I cover mixer with cloth to avoid splatter


    Stir in
    1 cup whole milk

    Mix in ice cream maker for 20-25 min

    This is the recipe I used. The blue boxes are reviews that have modifications. I used more dark choc than the recipe called for. We just ran out of the vanilla last night (Chocolate was gone night before), so tonight we're going to try Cherries Garcia.

    Let me know what you think of the B&J recipe book. Have been thinking about picking it up. We have a different version of your ice cream maker. Was telling thr wife the other day I want to dig it out. I made some homemade vanilla (the extract) and I'm itching to try it out in a good recipe.

    Ya know, I never checked! I did just Google it and found a lot of sugar free ice cream recipes. So the answer is yes!

    Tonight will be our first crack at one of their recipes. The thing I noticed about their Ice Cream recipes is they call for using the whole egg while the recipes I've used call for just the yolk. Also, they don't have you simmer the mixture on the stove first. I don't know what difference it makes, but we'll see.

    The next batch of vanilla will be with a bean, rather than the extract. I looked in the grocery store but the guy didn't have a clue where it was and I was in a hurry, so I got the extract...

    The book has the recipes for their most popular ice creams but also a lot more: candy, gelato, yogurt, etc... Even beer ice cream!

    If you love ice cream (and who doesn't?!) I doubt you'll regret it. Lot's of free recipes out there. We've only made 2 batches and we're hooked. So much beter than store bought. The B&J book was bundled with the machine on Amazon for a reasonable price. Seems like a good book at first read.

    We used to make it a lot growing up, usually sweet cream flavored. Even made it with the old hand crank makers, thats how you earn your ice cream.

    The wooden one where you'd use ice and rock salt. I remember taking turns either sitting on it or cranking it. The little drain hole would get clogged up with ice so we'd poke our finger in it to clear it. Trip down memory lane...

    Just had some of our Cherries Garcia, only we modded it a bit. We felt like chocolate ice cream rather than vanilla, so we made our Very Chocolate ice cream but used "lighter" dark chocolate. We then added dark chocolate shavings and Bada Bing cherries (quartered) into the mix at the end of it's cycle. By far the best ice cream yet. It's unbelievably good. So much better than anything we've gotten at the store.

    And yes, I've been on both ends of a wooden manual freezer... IMO, if you worked for it, it was way better. There's a life lesson in there somewhere.

    Ya I read some reviews about the book on Amazon and people talked about the no cook with egg in it. I wonder what it would do to their recipe if you did cook it. The book came out before the whole raw eggs are bad for you movement. I may have to order it.
