    i do this all the time!! make a gallon or the red sauce..and freeze it. then i make flat enchiladas..i put an egg on top.

    Carne asada burrito served "wet". I call it "El Wet Burro". We have plenty of options for Mexican food around here for sure.

    Huevos Motulenos es mi favorito.

    I've traveled extensively throughout Mexico and continue to discover regional specialties. One of the world's greatest foods.

    One of my most memorable meals was in Merida about 30 years ago. It was at a nice, but small hotel. A pork chop cooked in lime and chili with the usual sides. Some chefs in Mex have mad skills.
