Did you removed the headlight housing? I just watched a video that calls for the removal of the front grill and my bumper prevents that.

No, you have not remove housing if you have significant troubles doing this. You can just detach the cap on the headlight and dry it from the inside, or just let it dry. You need to dry it obviously to avoid a short circuit in the future. If you keep driving like this, you can come to the car and not be able to start it, one day, because your battery will be discharged.

We got 2 plugs out and unscrewed a cap. I have fans on both sides. The plugs were covered in dried mud. Could that be the cause?

    Yeah
I know this is a year old thread but just checking in cause I had really bad moisture in my headlights after a deep water crossing. So bad it was causing the DRL’s to flicker between low (light on level) and high (day brightness).
I pulled the caps and used a hair dryer with a pool hose method. 15 minutes on high and 30 min ok low per side and they were dried out and cleared up. I then cleaned the inside of the caps, wrung the water out of the sponges in the vents, very lightly greased the O rings and reassembled.

I've had some frost show up inside my headlights in the winter, but it's minor and intermittent

Had condensation for the first time this week. Shop vac in the bulb hole worked well for me today. I took the attachment off of the hose and it wedged in nicely. You can see the black hose if you zoom in. Condensation was gone in about an hour. Not sure where it came from yet so we'll see if it comes back. IMG_20230506_170125717_HDR.jpg
