Need advice

On Sunday (11/25/2012) evening I was rear ended by a lady while parked.

In detail

I'm parked NO key in ignition at all, listening to music on my cell phone via headphones minding my own. I see a lady getting into her vehicle and such, but I don't pay much attention. I put my hands over my eyes for a bit so I can doze off to pass some time away, but thankfully I opened my eyes to look around, unfortunately it wasn't in time. As the lady was backing up, she was getting TOO close for comfort and by the time I honked my horn (slammed my hand on the wheel), she had hit the front of my bumper. It's not that bad but it did nudge my truck some. We both get out of our vehicles (the lady looked all dramatic like when she got out) and the lady is already telling me she doesn't have car insurance. Then she goes on about other things but ... I told her that the damage was done and it needed to be fixed. So I asked for her drivers license, and registration to the vehicle at least. I took down her info (dumb ass me I forgot to get her contact number), and I made her take down mine as well. The next morning (today) I go to take pictures of the damage and call up my insurance company. My deductible is set @ $1k plus and the damage estimate came out to about $600 to get everything fixed and back to normal (although this was from seeing pictures I took in the morning of the damage - sent to the appraiser via email for an estimate). I also filed a police report about the matter so if I had to take her to court I could use that as evidence (as advised from my insurance provider).

Now it's come to the "out of pocket" part. Because the damages were not totaling $1k or above, my insurance will not deal with the costs. The rep. of my insurance told me that IF the event that I would have to pay out of my pocket, I would either take her to court (which I don't want to do because it's a hassle imo) or settle out of court. I have done this once, but the person paid in FULL for the repairs when I showed the estimate. The lady that hit me offered to pay for the damages BUT in payments which makes me worry about getting the FULL balance. How should I go about this?
