Stick on hood scoop from Autozone.
Move your "non" iTunes music into iTunes by dragging it into your library.

    This ^

iPad accepts MP3, as well as the apple formats. It has to be put onto your iPad via iTunes.

Jailbreak the ipad1 is easy, by using redsn0w. But ipad2 and iphone4s still waiting on jailbreak.
Jailbreak the ipad, you can get more stuff from Cydia. And you can custom the ipad the way you want.

Just click and drag your music files into itunes, then click and drag to your ipad. Easy :D

And if it's an Audio format that the iPad doesn't support (like WMA) iTunes will convert on the fly.

I would just import your music directory. It doesn't have to reside in the iTunes directory.
