    I do too, but the amount of cheese and butter I throw in already has them pretty oily, I'd be worried that the uncooked bacon would just be over the top. Only reason I say this was we tried injecting the potatoes with a meat injector once, I wanna say we tried some sort of oily dressing, and it over saturated the tators with oil and pretty much ruined the batch.

    I stack the dutch like so
    Layer of onions on the bottom to burn
    Potatoes
    Slices of butter
    Oil
    Seasonings
    onions
    enough cheese to cover potatoes
    -------
    do it again until I run out of ingredients

    I'd definitely pre cook them, just not too crispy. Drain the oil, chop it up and toss em in! The flavor would go well in there, they were tasty.

    That's what I was thinking! Usually I do a layer of chopped up honey baked ham, but for Mod Day I figured you were doing meat so I didn't want to add more in the mix lol. Good call man! I'll have to play around with stuff for the next mod day (and show up earlier so we can get done at the same time lol)

    Im getting ready to do a tri tip on the grill. I have some charcoal off to the side and wood chips in the smoker portion. How long should i leave that bad boy in? Last time i made it i wasnt to impressed
