    Wonder what he is hi-lifting off of....maybe he uses it as a winch?

    It's pretty simple when it comes down to it. When it's done cooking stop. Do not continue cooking once it's at the proper doneness (accounting for resting of course). Like Jay says the best way to do this is by temperature.

    The other thing is do it at least 10,000 times. I did the math and from when I was a grill cook at a high end, high volume steak house (https://maxdowntown.com/)I cooked around 65,000 steaks of many varieties in 18 months but that was 15 years ago. Back then I could look at a steak and it would tell me via mental telepathy what it's temperature was. At first I needed a thermometer to calibrate my brain and learn how to hear the steak in my mind. Now I use a thermometer all the time. The steaks just don't to talk to my brain like they used to.

    Since I cheat with my treager, I smoke my chicken at 150 to 180 for about an hr.
    Then crank it up to 375 until temp probe reads 170 on thighs. And skin has z little crisp to it. About 145 to 2 hrs tops total. Maybe longer if I cook slower. But I find that it drys out if you do that. And I like skin crispy.
