    I think the answer to that one is pretty simple. There are different sects of Mandalorian just like there are different sects of Christianity or Judaism. Within those sects there are different beliefs and practices. For out title character, his sect holds the belief that one should not remove ones helmet. Obviously, by what we've seen in the previous seasons, the other Mandalorian sects to not share this same belief.
    What I would find interesting is WHY his sect believes in this. :D
