Dry food! Look at the real travelers in africa/europe/asia - visit expedition portal. They don’t carry much of a fresh meat or fancy fridges (unless spouse forced him too or they drive a freaking unimog).

Good cooler can last 5-7 days of use, and I gurantee you I will see civilization at that point.

I prefer actually having both my Engel Fridge freezer and a cooler.
I am a sucker for steaks when I am out 2 weeks at a time.
