The hitch area has been getting a bit rusty and I want to paint over it to get it back to a nice black.

I picked up a wire brush, some rust check primer and some black rust paint.
Is there anything else I need to keep in mind for this? Seems like a dumb question but I gotta admit, I'm a bit intimidated to start painting the truck's undercarriage!

I've been doing a lot of rust battle and will have a write up soon.

Get yourself some sand blaster sanding paper and a rust converter spray( usually in the automotive section at wally world). Remove a flakey paint and rust with wire brush and paper( paper helps a lot with paint with rust under it.

Then clean the area and do a final wipe down with alchol to make sure its oil free.

Then do a few coats of rust converter, then the rust stop primer, and finally the paint.

This should get you the results your looking for

Here my frame after these steps

    Wow, looks awesome!
Exactly what I am trying to do. Thanks for the info.
What kind of alcohol would you suggest after brushing and sanding?
Do you think a gloss black or flat black rust paint would look better?

Also, what kind of grit would you recommend for the sandpaper?

Rubbing alcohol will do. Don't sacrifice your vodka. :) I'd hit it with medium grit and then fine, but it's not critical. All that's important is to give a good surface for the primer and paint to adhere. It ain't furniture...

The sand blaster it I think 60 grit. As long as you knock the bad parts off its ok. Keep up on this system is cheap and easy just the intial work is the longest
