I'd take the mat but it's a 3 hour drive.

 

I smoked a venison hind quarter and some chicken for my sons b-day party this weekend. It was a success and all went well, but i'm glad that shit is over with. Upside, bomb ass leftover venison sandwiches and chicken salads for work this week.

 

I've never had that. What do you do with that leg? Like how is it prepared? I've got a buddy that likes smoking meats and I never thought to use Venison over more juicy things like pork and salmon.

I can`t understand this tax return thing everyone seems to act like it is something good.

Nothing!! Thats the beauty of it. I had it dry aging for about a week in the refrigerator. Hit is with a liberal dose of Montreal Steak seasoning and let the magic of smoke do its thing for a couple hours. Then built the fire up until the meat came to temp. Tender, juicy, and who doesn't love smoked meat!

He typically uses a front shoulder, but I had a smaller hind that I didn't process yet, so decided to give it a go. I will be saving a front shoulder each year now just to do this!
