    Victoria 6.5" pan. For a modern cast iron pan they are hard to beat!

    Kenji’s meatballs in my 1930s lodge skillet. Probably my favorite pan I own and much lighter compared to the new ones which are not ground smooth.

    First chili of 2022. Going for less heat and more smoke this year. Doubled the quantity of my chipotles and backed off on the Pequin, and arbols. We will see how it turns out in a few hours!

    It turned out pretty darn good, but still not as smokey as I'd like. I used a lot more dried chili's this time overall when i made the chili paste, so the texture felt a little gritty to me. The heat is pretty good though. I like being able to get through a bowl without having to put it down.

    Frying up a cut pork loin in rendered smoked lard and grapeseed oil. Later threw some butter in. Tasty.

    Couldn’t decide which one I wanted online so I just ordered both with the intention of returning one. Now of course that they’re here I’ve decided to just keep both. Probably use the smaller one for my stovetop and reserve the larger for my 2 burner camp stove and home grill.
