I thought this might be a good all around tire, though off road capability is a priority for me.

Puzzle is that Pirelli states their 245/75/16 120T will not fit my Tacoma, even though that is the stock size for my 2019 SR. Finally found something to the affect of “doesn’t match vehicle manufacturer specifications”.

Would they not be over vehicle specs, certainly not under specs?

A second question is about sidewall strength. Apparently it is not uncommon for an E rated tire to be only two ply these days?

    Thanks for any help.

Probably not recommended because of the T speed dating. Has to do with temps it can handle at high speed and somewhat to do with side wall stiffness. 109 S is factory spec, 120 T exceeds that so it will work safely. Shouldn't go down in spec but up is fine.

Load range E is not the same as 10 ply like it used to be. Now it more of a "10 ply rating" but can be only 2 or 3 layers. But with the load capability of an E rated tire.

The Pirelli Scorpion All-Terrain Plus 245/75R-16 tire will fit your Tacoma. They are as you mention a E load rated tire which is much heavier rated than your stock tire. They are an all-terrain so they are made with some off-roading in mind although they are not an aggressive tread like a BFG T/A KO2, but if you need a tire that also handles snow well, this may be a good tire for your needs.

If we can help you choose the right tire for your needs please let us know.

Thanks for the help, much appreciated.

I don’t need the load rating, but wondered if it was wiser for any extra toughness it may provide when driving on unimproved roads.

We are happy to help anytime. If you are just traveling on gravel roads it's not necessary to go with E load rated tires although they are a more robust tire. It all depends on your where and how you plan on using your vehicle.
