    Curiosity finally got the best of me this morning and I made some spicy pitfaced scrambled eggs. A little on the sweet side but overall not too bad.

    On another note, pitfaced rub showed up on my facebook marketplace yesterday so I left you a nice comment. Keep up the good work!

    In searching the web for injection marinades I came to realize for the most part it's all a matter of personal taste. All seem to use a citrus or apple juice as a base along with a sweetener and then choose your spices. So my pork loin today will be pineapple teriyaki style with a few table spoons of Pitfaced added. The rub dissolved nicely.

    Looks like a good recipe! Was that injected today/cooked tonight? How'd it turn out?

    You're right on injections, they're all about what extra flavor you want to impart on the meat. The only real bit of advice is that injections that are more acidic can't really sit overnight and they start to breakdown the meat. A few hours ahead of time, though? No problem.

    If you have any pictures of the results, post them up!

    Had a great weekend! I took Friday off of work to head up to Denton (about an hour from my house) to stay in a hotel near the UNT campus. My final exam was in one of the campus testing facilities and I didn't want to have to drive in the morning and risk traffic.

    Studied all night and killed the exam in the morning.

    If you'll permit me to toot my own horn for a moment, I got a 96 on the final, an A for the course, and wrapped up my MBA with a 4.0 average. Saturday was such a damn relief. Relaxed with the family, had a few pops of whiskey, and didn't worry about anymore homework.

    Then, tonight, I got a couple of orders fulfilled! One from TacomaWorld, too :D. Now I'm starting my plan of attack for 2018.

    Some standard merchandise is definitely in the works. I will be running a contest, hopefully in January, to give away a pretty kick-ass prize pack. I'm also working on my next bulk order of rub so I can start heading around to various local retailers about trying to get on their shelves. Once I figure out the pitch, the packages, and which selling points work best, I'll start looking in to @horstuff 's idea about recruiting some TW folks to do some hustling with Pitfaced BBQ :D.

    Overall it turned out good but I was hoping that the marinade flavors would come through more. I let it sit for around 5 hours. Guessing with pineapple being more on the sweet side of the citrus family that it wasn't enough to make a big impact. Did pick up on the teriyaki.
    But now I'm considering all the possibilities in the future. Thinking about a bourbon based injection marinade.

    I've tinkered with a bourbon injection before, but I never followed through.

    Bird Dog Whiskey makes a blackberry flavored whiskey. I was trying that with pork. There is definitely something there if someone can get it dialed in. Looking forward to seeing what you try out.

    I'd like to try a beef roast next. Just getting into injection. Don't think I went strong enough with my choices. I see others using soy sauce, ginger, Worcestershire, Dijon mustard and various types of vinegar. I need to step it up.

    That's awesome man, congrats on the test and overall class. Part of your pitch should be a taste test if possible, both of the rub in it's virgin state and then what it add's to meat. One of the things I've always said is the proof is in the pudding so to speak.

    Restructured time is exactly right - idle hands being the tool of the devil and all ;). My business plan for my entrepreneurship was Pitfaced related, but not as rub focused. I'll need to get working on a new one with online peddling taking a lead role :laugh:. I had a few discussions with my Managerial Accounting professor about where I'm at, now. She had some great advice and I learned a bunch in the course that I can apply. I can do a lot better in my internal reporting and look forward to getting that structured more effectively.

    For sure! I have a warming box with an electric heating element in it, so I can actually serve some warm BBQ driving around all day. Might need to finally get an outlet run to the bed of the Tacoma. Time to hit up the DIY guides :D. Part of my next order will include some extra shakers/pouches for sampling purposes. Looking forward to hitting the streets!

    That's awesome, I think tasting it right out of the package show's a lot of the complex flavors, I know when I cook with it the flavors all sort of mellow out some and blend (which they should) take a pinch right out of the package and you taste a lot of it.
