SCA turn in steak. First time cooking this competition, so I don't exactly know what the judges are looking for, but for what I tried to do, I nailed this 100%. Exactly what I was going for. We're see if it's what the judges wanted!
    20180831_185043-01.jpg
Results in about half an hour.

No picture of the steak People's Choice ribeyes, but we got a lot of votes. Hoping we did well there, too.

68th out of 95 teams in steak. Really not sure what to say. Averaged less than 8's on doneness. Based on every practice cook, how that turned out temp wise was what I thought was a 9 at worst. Kind of bummed.

We didn't cook what the judges want. So be it.

We did cook what the people wanted, though!

1st place in the People's Choice Steak Showdown!
    20180831_213625.jpg

    Super pumped about that!

If you want to see what competition is all about, it's spending two and half days with people you love and would go to war with, then being damn proud of the fruits of your labor.

First year we've felt good about all four meats at the same time. We're not great at these formal competitions - we know that - but we came here with a plan and executed it nearly to perfection today. If it's not what the KCBS judges want, so be it. I'd put each of these meats in front of anyone looking for a good meal and feel great about their Pitfaced BBQ experience.

It’s not always about winning. It’s about the battle and those you fought it with. Some of the great memories in life I have are the stupid shit me and my friends have done that just comes out of left field.

BTW damn good looking meats. I would be proud to say I cooked those up.

Best ham yet. PF, my pork rub, and brown sugar and hour before finish. I took it to 170IT, and it was juicy and tender.

We had some shockingly low scores in three categories for KCBS. Pork we actually finished 2nd to last. A massive "what the ****" from us. We thought it was some of our best competition pork yet. Ribs, we had one judge give us a perfect score, another a high score, then a third give us the lowest single score we've received in 5 years of doing this. Chicken - I guess we didn't have enough *wow* in our flavor. We tried to play it a little less intense this year after being dinged for it being "too spicy" in years past. We got a comment card saying it "looked dry" and "tasted bland". Can't make 'em all happy.

That said, we had our highest category finish ever - we finished 14th in brisket out of 90 teams! I want to preface this by saying that we do everything as a team, so all of our successes and failures belong to us collectively, but brisket does hold a little extra weight in my heart. It's the one meat that I own totally (we have a chicken cook, a ribs cook, and a brisket cook, then pork by committee), so I was especially happy with that. More so given how disasterous my cook on Saturday went for the IBCA event (yikes). Just over 1 point total out being in the top 10. Still chasing that call...

We also finished 1st in the Steak Showdown (steak People's Choice) out of 20 teams and 4th in the BBQ People's Choice out of around 50 teams. Hardware three years in a row!

Anyways, here is a dump of pictures from the weekend. I'll post something in the smoking thread of the food, but otherwise ask away about anything. Competition is a fun experience, so long as you don't have a fragile ego about some faceless judge telling you your food sucks .

The fourth guy in this picture loved our stuff on Saturday's People's Choice and came back Sunday to hang out. Fan for life!
