    If your are looking to test out the spicy version, let me know! I think it will be about 10 samples, each a little under half a pound. I will have a shipping quote on the smaller amounts this week. The stuff ought to fit in a regular envelope if I vacuum pack it right, so it might just be standard postage? I don't know. We'll see. The cheaper the shipping, the cheaper the sample to you. That ought to be a good balance between # of testers and getting enough rub to each one to be able to do something with it. The recipe is written down, easily repeatable, and easily tweakable (is that a word?!?).

    So far, I have the following for testers of the spicy variant. I tried to go in order of posts. If you volunteered earlier and I missed you on this list, let me know and tell me which post I missed. I'll probably take the list to 15, however, #11-15, be aware that we may only have enough for 10 testers. Those on the list, confirm that you're in, at least pending the quote on cost/sample size.

    So tried the rub out this weekend FINALLY. Did a flank steak with it as I said I was going to. I did two of them one with rub and one with just the smoke (had some picky kids over).

    My thoughts on the rub.

    Flavor Profile: Very complex flavors all of which play extremely well together. It is not overly sweet or too hot.
    Heat: I would put the heat at about a 1, it's that little bit of heat on the back end.
    Smell: It smells as good as it tastes. The first thing I did was smell it and then had my wife smell it. She smiled and said wow that smells really good.
    Overall thoughts: I think this would be really good on or in just about anything. Right off the top of my head I will be using this the next time I am smoking just about anything, grilled corn (mix it in the butter and then spread on the corn), baked beans (I think the complexity will be a nice addition to the beans), steak (here I would probably go with a light rub as I love the steak to be the major player), chicken (would add a lot of depth to chicken) and the list goes on.

    I am going to be definitely be ordering more and I think I will be ordering for a couple of friends also. I have tried many rubs over the years both commercial and my own. I have to say this is far better than any of them to date.

    Now the pic (only one as I don't have the just rubbed pic off my phone yet). One on the left is the rubbed version if you can't tell. I went with a nice amount rubbed on both sides and sort of packed it in. Let it sit for about 20-30 mins then it went on the smoker for 2 hours at 225, removed to sit for a little while then cranked up the heat to sear it on both sides. With the addition of this rub this was outstanding.
