    Yeah, it’s a little known fact that most of the cooks that have been around for a while just don’t share. I had the same situation happen with ribs and it made me start doing everything at home. I would vacuum seal everything with extra space so I could open up, season and inject and reseal in the same bag as soon as I got checked in.
