Just throwing in there that Engel makes fridges/freezers that are extremely energy efficient and have been around for ages (comparatively). They have a single moving part in the compressor. Mine (MT45F) runs off the 100ah lithium in the truck charged by solar. Even without any solar charging, the battery will run the fridge for a week at 36 degrees. With solar it stays topped off if I can get any sun at all. I've been happy with mine which runs on DC in the truck and AC when functioning as a beer fridge at home :p. I have my slide lock mounted to my bed platform but I think with some angle iron and ingenuity you could get the slide lock mounted using the anchor points already available only having to swap out some longer bolts.

Picked up this outlet off Amazon and ran wire from the battery to the bed.
