Trying to remove the clamp that's in the way of the 3 leaf AAL. I'm grinding down the rivet but not sure what it should look like when completed? Do I need to grind more or? Can't seem to find any pictures of the actual process. Just "grind off the rivet."

You need to grind that clamp off from the leaf springs and the rest of the rivet until it's flush on the leaf springs. Spray the bare metal with some black paint. That's it!

I used an air hammer chisel and vice grips to pry open the clamps. After that, I used a sawzall with a metal blade and cut the whole thing off between the tab you are trying to grind off and the leaf spring. I tried grinding wheel at first (like what I think you are trying to do), and it generated alot of sparks with a waste of time. The sawzall solution was quick.
