I just recently bought fox 2.0 rear shocks with resi and next im wanting to get my new leaf pack.

First off im going with the 2.5 fox coilover with resi in the front so that gives you the idea of the lift in the front

    so the question is:

if i go with all pros new expedition leaf pack (3") will these shocks be too short?

and will i have a "raked" look after its all said and done with?

im planning on running 285s as well

If you want the truck to sit level, then you only need about 1.5" of lift in the rear.

Yes if you want the rake then the 3" will work, and those shocks should work fine with them.
