Thinking of making a rack for a motorcycle that will be attached to the truck's frame at the rear and sit behind the tailgate. Will this be too much weight off the rear? Will my truck do a wheelie?

Your frame won't be happy. Especially the thin C channel piece between the cab and bed, where the fuel tank crossmember mount to.

That's pretty heavy. Why not put moto in the bed and use a cargo rack in the hitch instead?

A first gen has a maximum trailer tongue rating of 600lb. As a trailer has its own axle this weight/load will stay consistent when driving down the road.

500lb motorcycle + 50lb (minimum) for a carrier is essentially the weight rating by themselves. Worse though, it is cantilevered from the truck and free to bounce up/down/left/right as you go down the road. If you hit a hard bump it will easily be twice the static load. That’s not what the hitch and your frame are designed to for.

I’d recommend the bed as others have said or a small tow-behind trailer.

Smaller bike an option? My CRF450X did great on my Versahaul (an awesome hitch hauler), but 500lb on top of that rack is asking for trouble on a Tacoma.
