The Bilstein 33-319070 has about 2.5 inch longer collapsed length vs stock. Does that mean I would also need to add 2.5 inches to the bump stop to protect the shock?

Probably, but only way to know for sure is to flex it out. A couple variables go into it being different than others. One is leaf packs being different thicknesses, for example some deaver packs are like 9 leafs thick, and some packs are 3 leafs thick. That would be about a 1.5'' difference in thickness between the two, which is in turn a 1.5'' difference on where the shock bottoms out.
