Getting a weird click from the read end of the truck, entire drive line has been rebuilt less than a year ago and there is no play in the carrier bearing or any u joints

I can only hear it when the truck is rolling under 15 mph

A click can be a lot of things... Video with sound would help.

If I were worried about the diff I'd first drain the oil and see what comes out.

Change the diff oil and see what comes out. That would be the first step.

Is it worse when you are turning?
Does your truck have the mechanical lsd or locker?

clicking on cars is usually CV joints
    not sure about trucks

front LBJ's can also knock over bumps and stopping (both slow speed) but not result in eyeball detectable play with pliers
