Kind of a two part question, so here goes. I have Fox 2.5 coilovers for the front of my truck and planning on a 1.5 - 2" AAL for the rear lift so I'm currently looking at rear shocks. My first question is whether to go for the Fox 2.0 or 2.5 on the rear. My off-roading is strictly beach driving in the summer and flying up and down rough, muddy, rutted out roads at high speed during hunting season in the fall and winter.

On to the second part of the question..I've seen it mentioned here a few times to get the rear shocks for the Tundra to put on the Tacoma. What is the reason and is this something I should be looking into?

If you like to to drive fast in rough terrain, I would suggest a 2.5 shock. We had been using Tundra rear shocks due their longer lengths. They are the correct length to use in the rear of a Tacoma without having to ordering a custom shock. Much more technical info can be found here as well:
