On my 2010 Taco, I've got a backup camera integrated with the rearview mirror. I'd like to move this to my aftermarket headunit though. The headunit uses a coaxial input for the camera. Is it as simple as just connecting the camera + and gnd wires to the coax with an adapter?

Yep. 2 wires. There’s a thread on here somewhere about easy access to the camera connection under the dash

If you have an old RCA cable laying around, you can cut one of the ends off and use it.

another +1 for bob's mirrors. i moved my reverse camera up to the mirror. he had all the pieces and was extremely prompt and knowledgeable on all those pieces.

also, the camera on these trucks is a simple composite video signal like an old-school home video camera. the quality you get in the mirror is going to be roughly the same quality you'll get on the radio, so don't be too surprised when you move it, there won't be an improvement on the quality.
