Im looking to get tires and rims for my 2000 tacoma and was wondering what rim depth I should get with a 32 in tire. Last thing I want are my tires sticking out from the side of my truck. I want to keep the wheels flush with the body

The width of your tire is what you need to be concerned about. With a 255mm wide tire you can use stock wheels, but eventually you're going to have rubbing issues with a wider 32 if you don't get a wheel with less backspacing (further from the wheel hub).

255/80r16 won't stick out much at all on stock wheels. 265/75r16 will slightly more (5mm on each side), but it's 31.6" diameter vs the first size I mentioned which is a true 32 at least theoretically - some companies are a little larger or smaller, but should be relatively similar.
