zzzzzzz OH! Good Morning SA! Yep, I was sleeping in and loving it. Beautiful day for doing nuthin' and making Scott's mustard ribs. Had a hard time buying them, though. WallyMart usually has several cooler locations - had NOTHING from Smithfield. Went to HEB after the game, and NO Baby Back, just "Back Ribs". They had HEB "organic" (!) at 4x last weeks price, and some Swift at a mere 2X. I just got one for now. Looked for info on shortages or delivery, but was all "last years news".

3 hrs @ 180. Two wrapped with either some beer or I may use the apple juice I bought. (Cider I thought dried it out). Unwrap the last hour. All 180. Right?

 

Yes, paste with sweet baby rays but when wrapped I crank it up 225, the added heat will decrease time the overall cook time and with added beer/moisture their not gonna dry out and they are not getting hardly any smoke.
Check it after 1hr wrapped, you might need to 90min/2hr. Then unwarp, paste, 180 for another 45 to 1hr. Your grill is not gonna cook exactly like mine, so it's still a trial and error, till success, until you figure the exact amount of times.
