    @BurlyJim nice set up. How are you powering the pellet grill when remote? I have a goal zero 500x that i'm thinking of using and have been looking at that grill and the others like it out there.

    I use a Jackery 1000, I think I smoked and grilled for 4 hours total over the weekend and it used up 25% of the power. Calculated it out and I know using it for a brisket would be near impossible haha.

    Best plan for something like that would be to prep it before and then finish it off while out at the camp site.

    its not as good as fresh, but ive been thinking of smoking a brisket at my house, vacuum packing portions, probably by the pound, and just reheating it at camp. a coworker mentioned he has a friend that did that and just throws the whole sealed vacuum pack into some boiling water to reheat it. call it a primitive sous vide i guess

    If boiling the plastic does not bother you, or taint the taste. I quit "Freezer Bag Cooking" cuz of that. Now I reconstitute/rehydrate/reheat in a pot.
    I would suggest hot, not boiling water.

    does it change the flavor that much? i know typical sous vide is around 160-180 F which isn't boiling, just hot. but heating water over a fire or my shitty coleman grill probably won't get that high anyway

    I think fire or Coleman would be fine. I think that I recall ... bubbles forming is a certain temp. (?) Internet says 160°F
    Or boil, remove from heat and add the bag, just like coffee or tea.
    I need to remember to do this sometime.

    Mine is similar, I use jalapenos instead of serrano, Himalayan salt, and apple cider vinegar instead of lime. I let it age about 8 hours to let the vinegar do its magic. Can clear cobwebs at fifty feet as the salt and vinegar tends to remove all oils from the tastebuds.

    I've tried many setups over the years ranging from full camp kitchen boxes to a simple one burner hiking stove. It's a journey, right?

    What I've settled on is 2 simple setups. One setup for non car camping (which I don't do very much of). This consists of your typical backpacking stove, single pot, etc. Almost always typical backpacking food.

    My most used setup is now a 2 burner Coleman Triton stove, small tea kettle for heating water for coffee/tea and a 10" high side non-stick saute pan/lid and all my accessories in a medium plastic tote. Generally not a fan of non-stick, but cleanup is a breeze. I love being creative with that single pan setup, but if you plan the order and timing, some great meals can be had.

    From a fly-fishing trip this fall. Had access to a remote cabin (wood stove and gas light only).

    Black Duck, Asparagus and Wild Rice (cooked rice first):

    This stove was a friend's single burner ...I didn't like it as there were no wings to stop the wind.

    Last time we went out camping we whipped up a big pot of red beans, rice, and andouille sausage for about twelve people. Camp tradition with this crew is breakfast and lunch is on you, each person cooks for the whole group one night each.

    Agreed. We found that the side shields rattle in the wind and make it hard to keep a steady flame at time.
